Kyoku was inspired by the honor and integrity of master Japanese bladesmiths who, after the decline of the samurai in 1868, applied their skills to cutlery with unprecedented innovation. Our mission is to make high-end Japanese cutlery affordable for professional chefs and home cooks worldwide. Our passion for culinary creativity keeps us at the forefront of handcrafted cutlery.
The Kyoku Nakiri vegetable knife is a Japanese-style knife that combines the features of a chef's knife with the versatility of a vegetable cleaver. Characterized by a flat profile and squared-off tip, this knife is ideal for push cutting and chopping, though less suitable for rock cutting.
Kyoku Nakiri knives feature a thin, wide blade that produces very fine and even cuts. The hollow edge design provides less drag while cutting. These knives are cryogenically treated using the traditional 3-step Honbazuke method, giving them incredible hardness while retaining flexibility and corrosion resistance.
Following traditional sword-making practices, Kyoku creates wonderfully practical knives with unique, stunning, and functional textures. With various uses and incredible edge-retention, Kyoku knives are ideal for professional chefs and cooking enthusiasts alike.
The ruthlessly sharp edge is handcrafted by seasoned artisans to a mirror polish and painstakingly manufactured for incredible hardness, flexibility, and corrosion resistance. The dense Pakkawood handle provides an ergonomic grip and long-lasting service life, adorned with an elegant mosaic pin to reveal its luxurious identity. The blade's full-tang metal extends through the handle to withstand punishing daily use without sacrificing its first-rate handling and performance.
Kyoku offers a range of kitchen knives, including the 7" Nakiri Vegetable Knife, 7" Vegetable Cleaver, 8" Chef Knife, 10.5" Sushi Sashimi Knife, and 5" Non-Serrated Steak Knife Set. These knives are made with superior Japanese steel and feature Pakkawood handles, with the exception of the Sushi Sashimi Knife which has a Wenge handle. All Kyoku knives come with a lifetime warranty, and the company offers free exchange or return if the item is defective.
